FIELD: liqueur and vodka industry, non-alcoholic industry.
SUBSTANCE: invention relates to anethole-containing drink. Drink comprises anethole, ethanol and effective amount of phospholipid available for human food to increase the apparent anethole solubility in above indicated drink. Drink comprises the following components, g/l: ethanol, 8-400; anethole, 0.2-10; phospholipid, 0.4-30, in particular, anethole, 0.5-2; ethanol, 40-300 with the ratio phospholipid to anethole = 0.5-10 by mass. Phospholipid is taken among the group of phospholipids presenting in lecithins or lysolecithins, phosphatidic acid, phosphatidylcholine, phosphatidylethanolamine, phosphatidylserine, phosphatidyl-inositol, lysophosphatidylcholine. Drink can comprise one or more antioxidizing, destabilizing substances being especially phenolic compounds if drink is diluted with water containing bivalent cations, antioxidants in sufficient amount and available for food, and also optionally sugar, acid liquid, in particular, tonic providing its turbidity. Drink is clear and can be prepared in the form of submicron emulsion or microemulsion comprising anethole-phospholipid phase in aqueous, alcoholoc or alcoholic-free phase. Microemulsion is prepared by homogenization under high pressure in high-speed mixer. An anti-oxidizing substance is taken among the group consisting of tocopherols, ascorbyl-palmitate, tea extracts, rosemary and sage extracts. Drink comprises components no containing bivalent cations, mainly calcium, magnesium and manganese. The turbid drink is prepared by dilution of above described drink.
