FIELD: food industry.
SUBSTANCE: invention relates to the food industry. A method for producing triticale-rye-flax flour is proposed, according to which the initial raw material is first purified, then a grinding mixture is made from prepared triticale grain, rye grain and flax seeds in a ratio of 5.0:4.3:0.7, a mixture of triticale grain and rye before grinding is moistened to a moisture content of 16-16.5% and tempered for 12 hours. Then the finished mixture is crushed on roller machines with the ribbed back along the back at a speed of rotation of a fast roller from 4.0 to 6.0 m/s, with a ratio of the circular speeds of rapidly and slowly rotating rollers from 1.5 to 2.5, s cutting density of rollers from 5 to 9 pieces per 1 cm, with a groove slope from 7 to 9%, followed by sorting the grinding product on sieves of various sizes.
EFFECT: method provides efficient processing of triticale grain, rye grain and flax seeds to obtain triticale-rye-flax flour with high fat and protein content for bakery and confectionery industries.
