SUBSTANCE: invention relates to a method of isolating glycolipids by enzymatic hydrolysis using a mixture of phospholipases PLA1 and PLA2 in an aqueous environment. A method of isolating glycolipids by enzymatic hydrolysis using a mixture of phospholipases PLA1 and PLA2 in an aqueous medium, characterized by phosphatide concentrate subjected to enzymatic hydrolysis, and the phosphatide concentrate homogenized with water, then adding aqueous solution of phospholipases PLA1 and PLA2, enzymatic hydrolysis of the mixture at a pH selected from pH 5.0, pH 5.5, pH 6.0, pH 6.5, and thermostating at a temperature selected from 45°C, 50°C, 55°C, then subjecting to thermal destruction to inactivate the enzymes, removal of water, after which extracting neutral and low-polar lipids from the dry residue with acetone, then drying the acetone-insoluble fraction containing glycolipids.
EFFECT: above method makes it possible to isolate a complex of plant glycolipids from phosphatide concentrates.
