FIELD: oil and fat industry.

SUBSTANCE: invention can be used to extract glycolipids from secondary products of processing vegetable oils, in particular phosphatide concentrates (PC) using phospholipolytic enzymes—phospholipases. Disclosed is a method of extracting glycolipids by enzymatic hydrolysis, including enzymatic hydrolysis of a phosphatide concentrate, thermal decomposition of a mixture for inactivating enzymes, removing water from the mixture, extraction of dry residue with acetone, drying of acetone-insoluble fraction containing glycolipids, wherein enzymatic hydrolysis of phosphatide concentrate is carried out in presence of phospholipase C at pH from 5.0 to 5.5 and thermostating at temperature from 50° to 60°C, removal of water from the mixture is carried out by sublimation drying, by freezing the mixture obtained after hydrolysis, at a temperature of minus 60°C for 3 hours, followed by evacuation at a maximum temperature in chamber of 12°C until complete drying of the product.

EFFECT: implementation of a method of isolating plant glycolipids from PC by enzymatic hydrolysis using one type of phospholipase—phospholipase C, allowing to improve its quality characteristics, in particular to reduce the amount of enzyme used, save time spent on drying the product after enzymatic hydrolysis, as well as reduce loss of glycolipids.
