FIELD: food industry.
SUBSTANCE: dry mixture of steviol glycosides which contains Reb A, Reb D, Reb M, as well as additional/optional components is proposed. The steviol glycosides Reb A, Reb D, Reb M of the dry mixture have a total solubility in water of at least 10,000 ppm. at 21°C, optionally persisting for at least 5 days. Also the following is proposed: a beverage containing a mixture of steviol glycosides, a beverage concentrate, the use of a mixture of steviol glycosides and a method of producing a sweetener composition with high solubility.
EFFECT: invention is aimed at enhancing sweetness in food products and beverages with reduced sugar content.
