FIELD: food industry.
SUBSTANCE: invention relates to dairy industry. Method involves reducing dry defatted milk with aqueous extract of sea ware seaweed. In order to obtain the extract, sea ware seaweed is chopped to pieces of 1 mm, poured into water of 50°C in the amount of 285.9 kg, extracted by soaking while stirring regularly for 4 hours, water base is separated from hard residue by means of decantation, the obtained extract is cooled to 35-40°C and supplied for reduction, granulated sugar is added, the extract is filtered and homogenised. Then it is crystallised in the presence of lactose, cooled and packed.
EFFECT: invention enables to increase the product nutritional value owing to enrichment with iodine, biologically active substances, macro- and microelements, vitamins containing in the sea ware seaweed, enhance pharmacological effect and improve organoleptic characteristics.
