FIELD: food industry.
SUBSTANCE: disclosed is a method of separating fillmass of first crystallisation, which comprises feeding it into a centrifuge, separating white sugar crystals, first and second runoffs, washing sugar crystals, bringing them to moisture content of 0.8–1.5% of their weight before unloading from the centrifuge rotor. To fillmass is added distilled soft monoglyceride heated by 3–5 °C is higher than the temperature of the fillmass when it is lowered from the vacuum apparatus. Process of separating the fillmass in a centrifugal force field is carried out with a device for recording the moment of separation of the intercrystalline solution from sugar crystals. Crystals washing is carried out in two steps, first with a sugar-containing solution with the addition of ozone, which is sprayed onto a layer of sugar crystals under pressure of 0.3–0.4 MPa, then rinse water saturated with steam is supplied through the same nozzles.
EFFECT: invention provides high yield of sugar from the centrifuge while reducing water consumption for washing its crystals.
