SUBSTANCE: invention relates to sugar production. Disclosed is a method of producing fillmass of first crystallization with subsequent separation, providing for its supply to a centrifuge, separation with separation of sugar crystals and intercrystalline solution, washing of sugar crystals with formation of the second effluent, extraction of sugar crystals and their drying. Before descent from the vacuum apparatus, the fillmass is swung by its first effluent, diluted with hot water, while maintaining a supersaturation coefficient in range of 1.03–1.05, and before feeding it for centrifugation, it is swung by the first effluent in a mixture with hydrogen peroxide. Separation of fillmass is carried out in a centrifuge equipped with a device for recording the moment of separation of the intercrystalline solution from sugar crystals, which contains a housing and a sensitive element in the form of a plate. Sugar crystals are washed in two stages, first with a sugar-containing solution and then with hot water.
EFFECT: invention provides higher sugar yield.
