FIELD: food industry.
SUBSTANCE: disclosed is a method for separating fillmass of a first crystallisation of sugar production, comprising loading fillmass into a centrifuge, separating a first shade from sugar crystals, washing them with separation of the second effluent and drying sugar crystals before unloading from the rotor to moisture content of 0.8–1.5%. Sugar crystals in the separated fillmass are formed on the basis of mother fillmass with subsequent fractionation based on separation in the form of crystallization centres with size of 0.16–0.20 mm. Fillmass loaded into the centrifuge rotor is rocked by a second crystallisation sugar melt containing a chromaticity inhibitor in the form of a saturated solution of a trisodium salt of nitrilotrimethylphosphonic acid. Washing of sugar crystals is carried out in two stages — first with a solution of sugar clearing of the second crystallisation, enriched with trisodium salt of nitrilotrimethylphosphonic acid, and then with hot water saturated with ozone.
EFFECT: invention allows to increase sugar yield from the centrifuge, as well as to improve its quality indices.
