FIELD: food industry.

SUBSTANCE: described is a method for the production of a solid product selected from a solid feed ingredient, or a solid food ingredient, or a solid food additive, involving production of a biomass substrate, including carbohydrates and a protein substance originating from soya bean seeds, rape seeds or mixtures thereof, wherein at least 20 wt.% of said biomass include carbohydrates and a protein substance originating from soya bean seeds, rape seeds or mixtures thereof, mixing said substrate with an enzyme preparation or a combination of enzyme preparations, and adding water in an amount which provides the initial mixture for incubation, having water content of 30 wt.% to 70 wt.% and ratio of wet bulk density to dry bulk density of 0.60 to 1.45, incubating said initial mixture for incubation for 1–48 hours at temperature of 20–70 °C and extracting said end products from the incubated mixture, wherein the incubation step is performed as a continuous process in a uniform plug flow in a vertical reactor for incubation without mixing with devices for inlet of said mixture and additives and devices for outlet of said solid transformation product, and biomass movement is mediated by gravitational force.

EFFECT: invention enables to obtain bioproducts with a high protein content and/or a modified sugar profile, which include a reduced amount of indigestible carbohydrates and/or anti-nutritional factors.
