FIELD: food industry; physics.

SUBSTANCE: invention relates to the field of food products quality control and concerns an optical method for evaluation of the integument tissue integrity of fruits and vegetables. When implementing the method, the surface of the fruit is illuminated with coherent optical radiation, a speckle pattern is formed, the average speckle size (R) is determined and assessing the integrity of the cover tissues of fruits and vegetables by comparing the obtained R values with the corresponding values for a healthy, defect-free surface. Degree of decrease in the index is used to determine the degree of integrity of the integumentary tissues.

EFFECT: lower labour input and higher accuracy of analysis.
