FIELD: food industry.
SUBSTANCE: invention relates to food industry and can be used in production of cereals and catering. Disclosed is a method of treating rice groats, which provides for treatment with low-temperature nonequilibrium plasma, wherein treatment of rice groats is carried out in argon at atmospheric pressure with current of 200-400 mcA, when using an argon plasma source based on a glow discharge of atmospheric pressure created in an electrode structure with pin cathodes and a flat metal anode, on which rice grits are placed, when supplying DC voltage up to 10 kV, while the interelectrode distance is 20-30 mm, duration of treatment 1-3 minutes.
EFFECT: invention provides high water absorption (23-38%) of rice groats, which leads to reduction of time for cooking groats by 17-25% and, as a result, reduces energy consumption during production of rice groats dishes.
