FIELD: food industry.
SUBSTANCE: invention relates to food industry, namely to production of food whole-ground triticale-farro flour from triticale-farro grain mixture. Method of producing whole-ground triticale-farro flour is characterized by the fact that a grinding mixture is made from prepared grains of triticale and farro in ratio of 70:30% to 50:50%. Before milling triticale and farro grains are moistened to moisture content of 14.5-15.0% and tempered for 10 hours. After that, the ready triticale-farro mixture is milled in a knife mill at frequency of 25,000 rpm with subsequent sorting of milling products on a flour sieve with a mesh size of 224 mcm.
EFFECT: invention makes it possible to develop efficient technology of combined processing of triticale and farro grains with production of whole-ground triticale-farro flour, as well as to expand the range of raw materials used in bakery and confectionary industry.
