FIELD: production of high-quality rye-wheat flour. SUBSTANCE: method provides for proportioning of milling mix from grain of rye and wheat in proportion (20-80): 80-20) volume percent; in this case use is made of low- vitreous wheat with a content of gluten not exceeding 20%. Milling mix is moistened until grain moisture content within 14 to 15% is attained and softened for 8 to 10 hours, then milling mix is subjected to stage shattering in ragging process, threshing in grinding process, and flour grade is formed. EFFECT: facilitated procedure.
