FIELD: baking industry. SUBSTANCE: method includes preparation of grain to milling, crushing and milling processes and formation of flour grades. Grain crushing is performed in three stages. At first and second stages, grain is crushed successively in roller machines and sorting of produced product is carried out jointly after second stage with removing 18-20% of flour on sieve 38k. At third stage after roller machine product is additionally crushed and sorted in radial-beater machine with production of large fraction of bran in amount of 22-25% and further sorting by sieving with separation of 8-10% of fine bran and 10-12% of flour. Milling process is effected in two stages. At first stage, milling is carried out with separating 28-32% of flour, and at second stage milling is performed in roller machine with rough working surface with subsequent combined sieving of all crushed products and producing 10-14% of flour. For forming grades of flour from all sieve-produced flour streams, arranged are 32-35% of first grade flour and 32-35% of second grade flour. Final fractions of product are additionally processed in roller machine of third stage of crushing process. EFFECT: high efficiency. 1 cl, 1 dwg
