FIELD: wine industry and production of juices. SUBSTANCE: apparatus has thermostatically controlled vessel with process branch pipes, drive mixer and bubbler. Mixer is positioned within vessel. Vessel has springy rings axially aligned with vessel and secured to two rods. Set of baffles are attached to vessel wall by means of supporting members in spaced relation to vessel wall. Bubbler is made circular and provided with outlet openings formed as supersonic nozzles. EFFECT: increased efficiency, simplified construction and improved quality of product. 2 cl, 3 dwg
