FIELD: alcoholic beverage industry. SUBSTANCE: solution of 40% proof is prepared and sodium bicarbonate is introduced in it. Simultaneously aqueous-alcohol infusion of I discharging of pearl-barley is prepared. Infusion is aged for 20-24 h, filtered, and received filtrate is introduced in finishing tank together with sugar. Vodka is aged for 3-4 h, filtered and bottled. Ready-to-use vodka has the following ratio of ingredients, kg/1000 dal: pearl-barley, 1.0-1.5; sodium bicarbonate, 0.1-0.3; sugar, 10-15; aqueous-alcohol liquid, the balance.
