FIELD: biotechnology, food industry. SUBSTANCE: invention relates to technology of food addition making. Method of preparing biologically active addition involves culturing bacteria-eubiotics biomass up to titer value 109 CFU/ml, not less, separate preparing two parts of friable filling agent-sorbent at residual moisture 2 wt.-%, not above, mixing the first part of filling agent-sorbent with bacteria-eubiotics liquid mass to obtain semiproduct as granules or powder. Then the indicated semiproduct is added to the second part of filling agent-sorbent followed by additional drying the obtained mixture, packaging ready powder-like food addition into containers or separation of the dried food addition granules from the second part of filling agent-sorbent and their packaging into containers. The first part of filling agent-sorbent is selected or prepared at the content of osmotically active substances providing osmotic pressure of solution 3 MPa, not above, during mixing with bacteria-eubiotics liquid biomass. Mixing this part of filling agent-sorbent with bacteria-eubiotics biomass is carried out at ratio (3: 1), not less. Filling for bread and confectionery articles has binding agent, components for improvement of organoleptic properties of the end product and biologically active food addition. As biologically active food addition the food addition based on bacteria-eubiotics or bacteria-eubiotics liquid biomass at titer 109 CFU/ml can be used at the following quantitative ratio of components, wt.-%: binding agent 25.0-40.0; biologically active food addition 0.1-7.0 and components used for improvement of organoleptic and nutrient properties of the end product - the rest up to 100%.
