METHOD OF PRODUCING SPECIAL VODKA Russian patent published in 2002 - IPC

FIELD: alcoholic beverage industry, particularly, production of special vodka "SHOTTOVSKAYA". SUBSTANCE: method involves additional cleaning of corrected water from organic impurities by passing through filter with activated carbon of BAU-A type. Rate of filtrate flow is within 1-2.5 m/h. Upon leaving of carbon battery, softened water cleaned from organic impurities is directed to sand filter for catching carbon particles, and then, water is supplied to a collector of treated water. Preparation aqueous-alcoholic mixture (solution) is carried out in an injector. Softened water treated with activated carbon is directed to vacuum cavity of the injector under pressure. Ethyl rectified alcohol "Extra" and suspension of activated carbon BAU-4 are supplied in water flow. Prepared vodka, under kinetic energy of water jet directed from pump into the injector, is directed to supply tank, where it is mixed with air for 30 min. Then vodka is directed to filtration for separation of carbon from aqueous-alcoholic mixture. Filtered vodka is directed to finishing tank where added are 65.8-% sugar syrup and aqueous-alcoholic infusions of lilac and lime-tree flowers. They are prepared from similar quantity of raw material, namely, 0.01-0.03 kg of lime-tree and lilac flowers by their single infusion with aqueous-alcoholic liquid and filtration. Contents of finishing tank is mixed, and, if necessary, strength is corrected. Mixture is directed for bottling with obligatory control filtration. Prepared special vodka "SHOTTOVSKAYA" contains the following ingredients per 1000 dal: aqueous-alcoholic infusion of lime-tree flowers of Ist decantation, 1-2 l; aqueous-alcoholic infusion of lilac flowers of Ist decantation, 1-2 l; sugar, 11-13 kg; aqueous-alcoholic liquid, the balance. EFFECT: production of high-quality special vodka enriched with a complex of biologically active substances with slight tone of jasmine in aftertaste; broadened assortment of special vodkas. 1 tbl, 3 ex
