FIELD: sugar industry. SUBSTANCE: method involves settling protein compounds in juice, defecating, providing first saturation; separating sediment from juice; providing second saturation and filtering. Protein compounds are settled by exposing juice to electromagnetic field amplitude-modulated by oscillations of extremely low-frequency range, or to electromagnetic field frequency-modulated by oscillations of extremely low-frequency range, or to electromagnetic field phase-modulated by oscillations of extremely low- frequency range, and additionally to amplitude-modulated rectangular pulses of 15-200 ms duration and pause time of 10-50 ms between pulses. Intensity of each electromagnetic field is 120-1,400 A/m and exposure time is 10-60 min. EFFECT: reduced power consumption and decreased consumption of lime for defecation. 3 ex
