METHOD OF PRODUCTION OF VODKA "SAMARSKAYA" Russian patent published in 2002 - IPC

FIELD: liqueur and vodka industry. SUBSTANCE: an aqueous-spirituous solution is prepared in the preparing tank by mixing rectified ethyl alcohol "Luks" and purified drinking water taken in amount providing 40% strength of blend. Sugar as sugar syrup of concentration 65.8% or as an aqueous solution is added into the preparing tank. An aqueous-spirituous solution is stirred and purified in battery with activated carbon at the rate of filtration up to 40 and 30 dal/h for fresh and regenerated carbon, respectively. Then vodka is fed into the finishing tank. Vanillin is dissolved in rectified alcohol in the ratio 1:100, solution is divided for two parts and one part is added into the finishing tank simultaneously with vodka feeding. The tank content is stirred thoroughly. Then vodka strength is controlled, corrected its, the second part of vanillin is added in the process of correction and stirred. Vodka is bottled with obligatory control filtration. The following components are used, per 1000 dal of vodka: vanillin, 1.0-2.0 g; sugar, 9.5-10.5 kg; rectified ethyl alcohol "Luks" and purified drinking water are taken in amount to obtain 40% strength. Invention provides to obtain vodka with higher organoleptic indices, lower cost and labor intensity. The combination of technological procedures, components and their quantitative content ensures to preserve and stabilize vanillin aroma.
