FIELD: food industry. SUBSTANCE: base of chewing gum contains triglycerides having middle length of chain in amount from 0.02 to 0.5 mas.%. Triglycerides having middle length of chain may be used as a softener or emulsifier in base. In base composition, hydrogenated hard fat may be substituted with triglycerides having middle length in amount from 0.02 to 0.5 mas. %. The softener on base of such triglycerides gives chewing gum improved structure and softness, increases expire date at storage life and improves flavor.
