FIELD: food industry, particularly for liquid freezing-out and ice flakes production into chemical, pharmaceutical, microbiological and agricultural industries. SUBSTANCE: method involves crystallizing water in the form of ice crystals on rotary cylindrical surface submerged in liquid product layer under constant temperature; super-cooling ice under constant temperature. Constant temperature is obtained due to provision of constant coolant heat flow by accumulation thereof into drum and due to simultaneous reduction of thermal resistance of heat transfer as a result of using material with high heat conductivity coefficient, for instance aluminum-magnesium alloy AMg-5, as heat-exchange surface. Device for liquid freezing-out and ice flakes production with coolant heat accumulation comprises base, product tank, gasket units, shafts, drive means, drum, coolant inlet and outlet devices, device for ice removal. Inner wall of heat-exchange surface has polymetallic inserts including a number of plates formed of different materials. Plates are arranged in such a way that heat capacity of each plate increases in direction towards cylindrical surface center.
