FIELD: production of hot beverages, in particular, espresso coffee.
SUBSTANCE: method involves brewing ground material extracted by water, with substance placed in brewing chamber being brewed by water of boiling temperature, preferably, 110-1300C, yet being in liquid state; cooling beverage thus brewed to temperature below standard water boiling temperature until beverage reaches beverage discharge opening. Cooling of beverage thus brewed is preferably performed by means of heat-exchanger, through which newly supplied not heated water flows to cool it. Heat-exchanger is mounted for operation between brewing chamber and beverage discharge opening and is adapted for cooling of hot beverage brewed in brewing chamber to temperature below water boiling temperature.
EFFECT: increased efficiency in extracting of substance.
