METHOD FOR PRODUCING VODKA Russian patent published in 2006 - IPC C12G3/08 

FIELD: liqueur and vodka industry.

SUBSTANCE: method involves preparing an aqueous-alcoholic liquid by mixing rectified ethyl alcohol of any grade used in producing vodka and purified drinking water taken in the amounts providing vodka strength value 40.0 vol.%. Mineral or vegetable oil is added to aqueous-alcoholic liquid in the amount 3 ml per 1 l, not above, emulsion is stirred thoroughly and settled for separating into layers. Then aqueous-alcoholic liquid is separated by decantation and subjected its for treatment with adsorbent. A thickening agent swollen preliminary in small water volume is added to vodka at stirring in the amount from 0.05 to 0.5 g/l and filtered. Components according to specific vodka formulation can be added to aqueous-alcoholic liquid or vodka. Thickening agents or their mixtures used in food processing industry can be used as a thickening agent. Activated carbon and/or any other adsorbent used in producing vodka can be used as adsorbent. Proposed method provides enhancing quality of ready product as far as addition of mineral or vegetable oil results to reducing concentration of aldehydes, fusel oils, esters and methanol in aqueous-alcoholic solution, and thickening agent confers original organoleptic properties included visible viscosity of product. Vodka prepared by the proposed method has mild taste, pure vodka aroma with tints in case producing vodka by using specific components and light syrup-like consistence. Vodka has the following physicochemical indices: strength - 40%; alkalinity - 0.82 ml of HCl solution with the concentration 0.1 mole/l; mass concentration of acetic aldehyde - 2.0 mg/dm³ a.a.; mass concentration of ester - absent; volume part of methyl alcohol as measured for a.a. - 0.004%.
