FIELD: alcohol production.
SUBSTANCE: process comprises heating brew to optimal temperature, partially filling with it vertical vessel to form free mirror and creating depression within the vessel. Ethanol vapors and volatile components are isolated by means of recycling brew in closed circuit with bottom tapping and atomization in the top part of vessel under jet flow conditions created over free mirror and normally to it.
EFFECT: increased specific yield of ethanol, reduced brew treatment time, and increased concentration of solids in distillery dregs.
