FIELD: bactericidal treatment of portions of food meat, in particular bird carcasses, with trisodium phosphate solution.
SUBSTANCE: method involves creating fog in processing chamber, said fog being produced from trisodium phosphate solution which is passed through portions of meat to be treated. Apparatus has treating chamber open at both ends, conveyor for transporting of meat portions, and bactericidal solution spraying means.
EFFECT: reduced consumption of trisodium phosphate solution and reduced volume of phosphor delivered into purification construction.
