SUBSTANCE: invention relates to ensuring microbiological safety of meat production. The following is proposed: a method to reduce the contamination of pig and poultry carcasses during the scalding process, including the introduction of trisodium phosphate into tanks for scalding carcasses, which is added to the tanks twice: before the start of the shift in an amount from 1 to 4.4 g/l for pig-breeding enterprises and from 4.4 up to 9 g/l for poultry enterprises, as well as four hours after the start of the shift in amounts from 1.7 to 3 g/l for pig enterprises and from 1.7 to 4.1 g/l for poultry enterprises, as a result pH of the water in the tank is maintained within pH=10 throughout the entire production shift.

EFFECT: invention provides an expansion of the arsenal of methods of reducing bacterial contamination of pig and poultry carcasses in meat processing plants by reducing the thermal resistance of most microorganisms, which subsequently die under the influence of high temperatures during scalding with a significant reduction in contamination of pig and poultry carcasses.
