FIELD: technology of food products making.
SUBSTANCE: tomatoes are cut and blanched. Celery root, radishes and apples are blanched and grated. Lettuce and green onions are cut and frozen. Skin-free fillet of sea bass is cut. The above components are mixed without oxygen access with vegetable oil, acetic acid, sugar, table salt and calcium acetate. Prepared mixture is packed, sealed and sterilised.
EFFECT: higher digestibility as compared to similar culinary dish.
