SUBSTANCE: invention relates to the technology of preserved appetisers production. The method involves recipe components preparation, tomatoes cutting and blanching, celeriac, small radish and apples blanching and grating, lettuce and spring onion cutting and freezing, skin-off smoked rockfish fillet cutting, the listed components mixing with acetic acid, sugar and salt, the produced mixture and mayonnaise packing, sealing and sterilisation. The invention novelty is as follows: one additionally uses in the mixture composition ground pumpkin seeds extraction cake that is preliminarily poured with drinking water and maintained for swelling while the components are used at the following expenditure ratio, weight parts: skin-off smoked rockfish fillet - 260.9; celeriac - 81.2-82.5; small radish - 208.7; apples - 97.8; tomatoes - 97.9; spring onions - 47.8; lettuce - 47.8; pumpkin seeds extraction cake - 13.1; mayonnaise - 150; acetic acid in conversion to 80% concentration - 0.16; sugar - 15; salt - 8.9; water till the target product yield is equal to 1000.
EFFECT: method ensures reduction of the manufactured target product adhesion to container walls.
