FIELD: food production technology.
SUBSTANCE: method provides for boiling, peeling and cutting of hen's eggs, cutting and browning part of the onions in melted fat, cutting and drying "Knausskiy" bread, cutting of salted pork fat. Specified components are mixed with table salt and black bitter pepper to prepare mince. Beef is cut and chopped. Mince is laid on it. Beef is rolled to get rolls, breaded in part of wheat flour and fried in melted fat to get zrazy. Potatoes and marrows are cut and blanched. Fresh green peas are frozen. Rest of onions is cut, browned in melted butter and strained. The rest of the flour is browned in melted butter and mixed without oxygen access with potatoes, green peas, strained onions, marrows, sour cream, milk, sugar, table salt and laurel leaf to get side dish. Zrazy are packed into containers as well as side dish and bone broth, than sealed and sterilised.
EFFECT: higher assimilability compared to famous culinary dish.
