FIELD: food products.
SUBSTANCE: method includes destroying endogenous enzymes of yeast cells, processing of yeast cells by exogenous enzymes catalising polymer hydrolysis of cell membrane with freeing cytoplasm protein of yeast cells. The processing is carried out by two consecutive stages. The first stage implies usage of enzymes catalising polymer hydrolysis of cell membrane of β-yeast cellulose. Furthermore bioactive products of enzyme hydrolysis of β-yeast cellulose are obtained. Also the used enzymes catalise the hydrolysis according peptide bonds that is contained in the cell membrane of protein-β-yeast cellulose, protein-mannan and protein-chitin polymers. Herewith proteins, β-yeast cellulose, mannan and chitine are obtained. Destroying exogenous enzymes is carried out that catalise polymer hydrolysis according to peptide bonds used during the first stage of yeast cells processing. The second stage implies usage of enzymes catalising polymer hydrolysis of β-yeast cellulose, mannan and chitin. Herewith proteins of freed cytoplasm, obtained during the first stage of processing from cell membrane polymers proteins and bioactive components (the hydrolysis products of cell membrane polymers) are obtained. Protein content in the product is 66-67%.
EFFECT: improved output of the target finished product.
