FIELD: food products.
SUBSTANCE: method for producing edible protein enriched with biologically active components includes two-staged processing of yeast cells with exogenous ferments catalysed hydrolysis of cell polymers. Herewith during the first stage the initial zymogene composition is used. When the first stage is finished the initial zymogene composition is inactivated. Then the processing of secondary zymogene composition is performed. The initial zymogene composition contains for each gram of dried yeast 0.1-5.0 activity of proteinase and 10.0-80.0 activity units of mix of endo-β-gluconase and exo-β-gluconase. The secondary zymogene composition contains 50.0-300.0 activity units of mix of endo-β-gluconase and exo-β-gluconase, 5.0-20.0 activity units of mannanase and 0.01-0.5 activity units of chitinase.
EFFECT: method allows for product obtaining with high protein content.
