FIELD: physics, measurements.

SUBSTANCE: invention is related to fat-and-oil industry. Method comprises the following stages: measurement of teracycle-spectrum with time resolution of standard vegetable oils for formation of database of measured spectra; measurement of teracycle-spectrum with time resolution of inspected vegetable oil; and analysis of purity degree of inspected vegetable oil with application of previously formed database. Besides this method is realised in the device comprising the following components: device for measurement of spectrum for measurement of time forms of teracycle radiation pulses prior to and after radiation transmission through vegetable oil contained in container, during production of transmission spectra, or for direct measurement of time forms of teracycle radiation pulses prior to and after its reflection from vegetable oil during production of reflection spectra; and device for data processing to produce physical characteristics of vegetable oil in teracycle-range of frequencies by time forms of signals, in which device of spectra measurement comprises system of teracycle radiation pulses spectra measurement with time resolution with application of scanning optical delay line and single femtosecond laser, or system of teracycle radiation pulses spectra measurement with application of asynchronous optical scanning or phased scanning and two femtosecond lasers.

EFFECT: provision of possibility to simply and efficiently quantitatively asses degree of vegetable oil purity.
