FIELD: food industry.

SUBSTANCE: invention relates to food industry and can be used for food products evaporation, drying and foaming. The device comprises a working chamber consisting of an outer and an inner shells contained one inside the other to that to form a cavity between them, a vacuum treatment system consisting of a vacuum pump with an option of connection to the inner shell space. The working chamber is additionally equipped with a stationary unit with a control system. The stationary unit is designed as a housing equipped with a work top connected to the vacuum treatment system. The vacuum treatment system is mounted inside the housing and supplemented with a unit for condensate collection and removal. The housing is equipped with a system for the working chamber relocation relative to the work top while the working chamber is equipped with a UHF energy source and an access hole mounted into the outer and the inner shells walls. The working chamber inner shell and the work top are fabricated of dielectric vacuum tight materials while the inner shell is fabricated of a dielectric material.

EFFECT: invention enables accelerated treatment of moist food products for varied purposes such as evaporation, drying and foaming.
