FIELD: food industry.
SUBSTANCE: invention relates to food industry. The method envisages usage of red algae or agar production algal remains as the raw material. The raw material is treated with 1-7% alkali solution during 30-60 min (water duty being 1:2-1:4), filtered, boiled in water during 30-60 min (water duty being 1:2-1:4) or treated in an acid solution at pH amounting to 4.0-6.9 (water duty being 1:2-1:4) during 15-30 min. The produced fibres are simultaneously centrifuged and washed with hot water with subsequent drying until residual moisture content in the end product is 8-10%.
EFFECT: invention enables production of food fibres with yield up to 40%, the fibres containing polysaccharides (including cellular tissue) - 80% and protein - no more than 20% and having swelling power degree equal to 50-350%.
