FIELD: food industry.
SUBSTANCE: pork skin is milled into 0.15 - 0.5 cm3 particles. One performs treatment with an alkaline-salt solution consisting of saturated water solution of sodium chloride containing 5% sodium hydrate during 1-2 days. The treated material is washed and heated to a temperature not in excess of +45°C to produce a collagen-containing substance. The substance is filtrated, neutralised with 0.6 hydrochloric acid solution, frozen at a temperature of less than -10°C during 4-6 hours. The substance is defrosted in distilled water, filtered and heated at a temperature of +45°C till a liquid condition. Collagen is extracted from the melted substance by precipitation, the substance slowly added (continuously stirred) into acetone cooled to +4°C.
EFFECT: invention allows to produce a neutral collagen free of salts and acetic acid remains.
