FIELD: food industry.
SUBSTANCE: method envisages recipe components preparation, pork cutting, dried bulb onions, garlic, red hot pepper, caraway and laurel leaf mixing, frying in melted fat, addition of bone broth, conditioning till boiling, addition of pork and salt, the mixture cooking, broth separation, fermented cabbages introduction into the broth, conditioning till boiling, addition of flour, sour cream and milk, the listed components packing, sealing and sterilisation. The invention novelty is as follows: one stirs garlic before mixing, uses sunflower flour that is poured with bone broth and maintained for swelling before addition to cabbages while the components are used at the following expenditure ratio, weight parts: pork - 421.7-530.3; melted fat - 42.1; fermented cabbages - 480; garlic - 1.8-1.9; sunflower flour - 31; milk - 91; sour cream - 50.1; salt - 7.2; dried bulb onions - 1.2; red hot pepper - 0.8; caraway - 0.4; laurel leaf - 0.4; bone broth -till the target product yield is equal to 1000.
EFFECT: method ensures reduction of the manufactured target product adhesion to container walls.
