FIELD: food industry.
SUBSTANCE: invention is related to meat processing industry, in particular, to production of protein enriching agents for manufacture of sausage and mincemeat products. The composition contains secondary raw materials including preliminarily milled cattle nuchal ligament, lips and ears taken at a ratio of 1:1:1, Probio-Tec BB-12 and Propionic Culture PS-4 bacterial starters taken at a ratio of 2:1 and oatmeal. The initial components are used at the following ratio, wt %: nuchal ligament, lips and ears -72-75, Probio-Tec BB-12 and Propionic Culture PS-4 bacterial starters - 18-21, oatmeal - balance.
EFFECT: ensuring production of a prophylactic product for alimentation of both healthy people and those suffering from the gastro-intestinal tract diseases with preservation of high food and biological value.
