SUBSTANCE: invention relates to methods for enhancement and intensification of animal digestates taste and to edible compositions. The method for intensification of animal digestates taste includes animal entrails obtainment, addition of a gelation prevention quantity of one or more gelation prevention agents to the entrails to produce an entrails mixture; the gelation prevention agents are represented by electrolytes; then the mixture pH is conditioned to approximately 7.3 - 8.5 and conditions are created for hydrolysis of proteins as mixed with the mixture proteases with heating to a temperature facilitating Maillard reactions.
EFFECT: invention usage will allow to enhance the taste of edible compositions.
