FIELD: food industry.
SUBSTANCE: method envisages recipe components preparation, rice and red hot chilli pepper mixing and frying in fat and meat mincing. The listed components are mixed with CO2-extract of pyrolysis wood to obtain mince. Prepared fresh ornamental cabbages are taken to leaves, frozen and defrosted. The mince is moulded into cabbage leaves to produce cabbage rolls. Wheat flour is sauteed, mixed with broth, tomato puree, sugar and salt to obtain filling. The cabbage rolls and sauce are packaged, sealed and sterilised. The components are used at the following expenditure ratio, weight parts: meat - 283.1-370.1; fat - 15.6; ornamental cabbages - 499; rice - 45; wheat flour - 15; tomato puree in conversion to 10% dry substances content - 30.3; sugar - 3; salt - 10; CO2-extract of pyrolysis wood - 0.01; red hot chilli pepper - 0.5; broth till the target product yield is 1000.
EFFECT: production of new preserves with usage of non-traditional vegetal raw materials.
