FIELD: fat and oil industry.
SUBSTANCE: invention relates to oxidized and partially hydrogenated oil or fat for use as raw oil or fat for food products having the content of C18:2 trans-isomer from 10 to 60% by weight in relation to the total content of components of fatty acids and the peroxide number value from 15 to 350 mg-eq/kg. Invention also relates to a food oil or fat composition containing oxidized and partially hydrogenated oil or fat, as well as to a method of producing the said oxidized and partially hydrogenated oil or fat involving the stage of partial hydrogenation of oil or fat till the content of C18:2 trans-isomer is from 10 to 60% by weight in relation to the total content of components of fatty acids and the stage of oxidation of oil or fat till the peroxide number value is from 15 to 350 mg-eq/kg.
EFFECT: produced food composition has a hydrogenated aroma and taste similar to traditional compositions and a long-being hydrogenated aroma with the content of trans-fatty acids reduced to the one of standard liquid salad oil.
