FIELD: fat and oil industry.
SUBSTANCE: invention relates to fat and oil industry. Method of processing vegetable oils and/or animal fats includes: heating oil and/or fat till the temperature of 20-90 °C, preliminary processing of oil and/or fat with an acid for 1 minute; adjustment of pH with an alkaline compound within the range of 4-8 at the temperature of at least 20 °C, and obtaining an aqueous mixture, addition of enzymes to the aqueous mixture, reducing temperature of the water mixture to the temperature of crystallization of high-melting glycerides, separation of the water mixture into the water phase and containing processed vegetable oils and/or animal fats treated phase.
EFFECT: invention enables simultaneous degumming (using enzymes) and dewaxing (crystallization of high-melting glycerides), which enables processes at low temperatures.
