FIELD: food industry.
SUBSTANCE: invention relates to the conservation of plant parts and to the food industry. Method of preparation and conservation of Siberian pine seeds in the shell provides water saturation, incomplete stratification at a seed moisture of 10–45 %, which includes soaking seeds in a solution of soda or steaming them. Seeds are cooled to a temperature of -5 to +5 °C and can be preserved until the appearance of the germ by affecting the seeds of negative temperatures.
EFFECT: invention makes it possible to obtain pine nuts with the best taste characteristics, preserving useful properties and nutrients, with a soft shell, available at any time of the year.
