FIELD: food industry.
SUBSTANCE: invention relates to the food industry, in particular to methods for determining natamycin in wine materials and wines. For this, the sample is diluted with water and centrifuged. Natamycinum is determined by capillary electrophoresis at a wavelength of 303 nm, the lead electrolyte contains 10 mM sodium tetraborate and 40 mM sodium dodecyl sulfate, the length of the capillary is 0.5 m, and the inner diameter is 75 mcm.
EFFECT: invention provides a quick way to determine natamycinum in wine materials and wines without the use of toxic and expensive reagents.
