FIELD: food industry.
SUBSTANCE: invention relates to the food industry, in particular to a method for producing a fried-noodle cluster that does not turn over in a cup-shaped container, when exposed to external shock loads. In the method, the container body is tapered and expands gradually towards its opening. Further, a fried-noodle cluster is located approximately in the middle of the cup-shaped container in such a way that the side of the noodle cluster is in contact with the inner side of the cup-shaped container. This method includes the step of fixing the shape of the lower part of a fried-noodle cluster located in the lower part of the cup-shaped container by placing gelatinized noodle strings in the package and roasting, first of all, only the lower part of the gelatinized noodle strings. Also the degree of immersion of the bottom of the package in frying oil is from 10 % to 80 % of the height of the package. This invention relates to a fried-noodle cluster.
EFFECT: invention provides a fried-noodle cluster of uniform density, which is not subject to overturning under the action of external shock loads.
