FIELD: food industry.
SUBSTANCE: invention relates to food industry. Described a method of producing a starter culture, comprising at least two different variants resistant to bacteriophages Streptococcus thermophiles. In one version, the method includes a step of exposing a maternal bacterial Streptococcus thermophiles strain containing a CRISPR locus to at least one bacteriophage of the Siphoviridae family capable of infecting said maternal strain in order to obtain a mixture of bacteria containing variant bacterial strains resistant to bacteriophages.
EFFECT: invention extends range of products for production of starter cultures.
