FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to alcohol-free beverages. Initial raw material for production of 100 daL of beverage is represented by 90.00–97.00 kg of sugar, 7.00–8.00 l of water-alcohol infusion of bird cherry, 3.30–3.45 kg of carbon dioxide, 1.35–1.45 kg of citric acid, 0.20–0.25 kg of colouring agent, the balance is water.
EFFECT: this allows to produce a carbonated alcohol-free beverage, which is a transparent liquid, without foreign inclusions, colour pale yellow to golden yellow and having a natural aroma of bird cherry, and besides, it allows to expand the range of alcohol-free beverages, impart new taste qualities, enrich it with biologically active substances contained in bird cherry fruits.
