FIELD: food industry.
SUBSTANCE: invention relates to food industry. Disclosed is a method for production of sugar, which provides for obtaining diffusion juice, its purification, evaporation, filtration, boiling out of fillmass, its centrifugation, washing sugar in a centrifuge rotor and drying sugar. At the moment of completion of sugar crystals washing during the centrifuge rotor deceleration and reduction of speed to 300–200 min-1, the food additives solution is sprayed on the surface of the washed crystals at pressure of 0.3–0.4 MPa. Selenium, β-carotene, fructooligosaccharide are used as food additives. First, food additives are passed through a cavitator. Green tea extract is sprayed on sugar before feeding into drying apparatus.
EFFECT: invention enables to obtain sugar with increased nutritive value.
