FIELD: food industry.
SUBSTANCE: invention relates to the food industry, in particular to compositions of biodegradable, hydrophobic films containing ichthyogelatin and chitosan, and can be used for the manufacture of packaging films for a protective coating or packaging of frozen semi-finished products, bulk products in the field of public catering and trade. An edible food film is proposed, which includes as a base water, a plasticizer-glycerin and a structurant, while the film uses ichthyogelatin obtained from fish scales as a structurant and chitosan dissolved in a 3-4% aqueous solution of acetic acid, with the following initial ratio components, wt.%: base-water 56-60; ichthyogelatin 5-8; chitosan 1-3; an aqueous solution of acetic acid 27-30; glycerin 2-3.
EFFECT: invention is aimed at improving the quality of degradable water-soluble food film, soluble in both hot and room temperature water, transparent without deficiencies in structure, high plasticity and strength, with a long shelf life, with high bacteriostatic activity.
